In this episode, we are making a Rutabaga Curry with lots of spices from your pantry and 5 hearty ingredients; rutabaga, broccoli, cauliflower, freezer peas and Haloumi cheese. If you haven’t cooked a curry from scratch, this is a great start!

How to Make Rutabaga Curry

  1. Place all of your sofrito ingredients into a food processor or blender and combine until you get a chunky paste.
  2. While that is blending, heat a heavy-based pot on medium heat with olive oil to coat the bottom. Then stir in 1 cup of your sofrito mix. Stir slowly and consistently for 10 minutes to allow your mix to caramelize; add your spices while continuing to stir.
  3. Once your sofrito is coated evenly with your spices, stir in 1 can of tomato soup, then gradually add your vegetable broth, a little bit at a time, until you have what looks like a dark roasted soup. Turn your stove on to low while we cut up our vegetables.
  4. Peel and cut your rutabaga to 1” cubes, cut your cauliflower and broccoli into approximately the same size florets to get all the veg ready. Add the rutabaga to your pot, bring up the heat again to medium, cover and let braise for about 40 mins. Then add your roughly chopped cauliflower florets and stir through. Make sure you cover the pot once you’ve added this.
  5. Once the cauliflower has been cooked through for about 10 minutes, mix in the roughly chopped broccoli florets, then add the freezer peas and the cubed Haloumi. Fully cover the vegetables in the curry, then cover again to warm everything through for another 10 minutes. Perfect for the broccoli, as it will still have some crunch when served.
  6. Serve family-style over jasmine rice with warmed naan bread and garnish with thinly sliced green onions, your cilantro leaves and a squeeze of half a lime. With the other half of your lime, cut it into 4 pieces to keep on the side for your family to have their own little squeeze and add a dollop of yogurt if you’d like!
