Salmon and Creamy Gnocchi
- Arrange salmon and green beans on foil-lined baking sheet; sprinkle oil and pepper. Broil until fish flakes easily when tested,about 7 minutes.
- Meanwhile,in saucepan,stir together condensed soup,milk,1/3 cup (75 mL) of the green onions and lemon rind over medium heat until smooth. Bring to simmer.
- Stir cooked gnocchi into soup mixture; simmer for 3 minutes. To serve,sprinkle remaining green onions over gnocchi; top with salmon and green beans.
Substitute the green beans with yellow beans or asparagus.
