Tuna Pasta Salad with Celery and Herbs


Directions
- In large pot, bring broth and pasta to a boil, reduce heat and simmer until pasta is al dente and most of the liquid has been absorbed, about 10 minutes. Set aside.
- In a large bowl, whisk together mayonnaise and lemon juice. Add the tuna, celery stalks and leaves, onion, and cooled pasta; season with salt, pepper and parsley. Toss to combine.
Recipe Tips
For a twist, add in some of your favourite vegetables such as zucchini or tomatoes.

Nice Twist!
I liked the fact that this version of tuna pasta salad calls for much less mayo than the usual. I liked the addition of chopped parsley and celery leaves. I think my "millennial" son and daughter-in-law will like this lighter salad, but I liked it myself when I did a pre-taste. I used cavatappi pasta because it's twisty and looks nice in the bowl. A pound of pasta makes a lot of salad; you can easily halve it, but this amount is great for a crowd and/or giving away.
