How to Make Chickpea Salad
- In a large bowl, combine Campbell's light tomato condensed soup with diced cucumbers, diced seeded tomato, chopped red onion and the rinsed and drained chickpeas.
- For the dressing, mix together two tablespoons lemon juice, minced fresh parsley, extra virgin olive oil, and salt and pepper.
- Mix veggies and dressing together and toss until all veggies are covered with the dressing.
The options are endless for this versatile Mediterranean-style salad recipe. Make it your own by adding avocado, cilantro, feta or parmesan cheese, tahini, red peppers, olives, and sun-dried tomatoes.
