It’s a perfect summer salad, and makes an excellent side dish for BBQ lunches or dinners. This salad is very easy to make and requires just a few basic ingredients, including fresh herbs and chickpeas, of course!

How to Make Chickpea Salad

  1. In a large bowl, combine Campbell's Light Tomato Condensed Soup with diced cucumbers, diced seeded tomato, chopped red onion and the rinsed and drained chickpeas.
  2. For the dressing, mix together two tablespoons lemon juice, minced fresh parsley, extra virgin olive oil, and salt and pepper.
  3. Mix veggies and dressing together and toss until all veggies are covered with the dressing.

The options are endless for this versatile Mediterranean-style salad recipe. Make it your own by adding avocado, cilantro, feta or Parmesan cheese, tahini, red peppers, olives, and sun-dried tomatoes.
