Easy Butter Chickpea Curry
A cozy, vegetarian twist on butter chicken made with Prego Pasta Sauce, ready in minutes. Serve it up with basmati rice and naan for instant comfort food vibes.
Directions
- Preheat a large skillet over medium heat. Add olive oil and sauté the onions for 3 minutes, then add the garlic, curry powder and salt and cook another minute until spices are toasted and fragrant.
- Gently whisk in the Prego sauce and coconut milk, mixing well. Bring to a rapid simmer over medium heat for 8–10 minutes, until sauce is slightly reduced and thickened.
- Add the chickpeas and cook for another 5 minutes.
- Serve hot with basmati rice and warm naan bread.
Recipe Tips
Dont forget to add some veggies to your meal, serve with green beans or broccoli, or try this, stir in 2 cups of baby spinach with the chickpeas for the last 5 minutes of cooking.
