Salmon and Creamy Asparagus Gnocchi
- Preheat broiler to high. Set oven rack to highest position.
- Arrange salmon and asparagus on foil-lined baking sheet; brush with oil and season with pepper. Broil 5-8 minutes or until fish flakes easily when tested with a fork.
- Meanwhile, in a saucepan, stir together soup, milk, green onions, and lemon zest until smooth. Bring to simmer over medium heat.Stir cooked gnocchi into sauce; simmer 2-3 minutes longer.
- To serve, lay asparagus over gnocchi, top with salmon filet.
Garnish with additional sliced green onions, if desired.
