Savoury Oatmeal with Tomato, Spinach & Egg
Yes! Savoury oatmeal for breakfast! A healthier, high protein alternative to the sugary, sweet version, here’s the latest trend for breakfast!
Directions
- In a medium saucepan, bring the broth to a boil. Stir in the oats and reduce the heat to a simmer. Cook, stirring occasionally, until the oats are creamy, about 5 minutes.
- Stir in half a jar of Prego sauce and continue cooking for 1-2 minutes. Stir in the spinach (or kale) and cook until the greens wilt.
- Meanwhile, in a separate skillet or pot, fry or poach the eggs to your liking. Note: Eggs should be cooked to a temperature of 165°F (75°C).
- Divide the savoury oatmeal between two bowls. Squeeze with fresh lemon juice, top with the eggs, sprinkle with parmesan cheese and season with salt and pepper to taste. Serve hot and enjoy a savoury twist on an old staple!
