  1. Preheat a large, non-stick skillet over medium-high heat. Remove chorizo from casing and add to pan, break up into small pieces, frying until browned, about 3 minutes.
  2. Add the diced onions and green peppers and sauté for 3 minutes. Then add the garlic and cook for one minute more.
  3. Stir in the rinsed chickpeas and diced tomatoes. Add the condensed spicy tomato soup, stir well to combine. Bring to a simmer over medium heat for 3 minutes.
  4. Make four wells with the back of a spoon and gently crack an egg into each well. Cover pan and simmer until eggs are soft poached, about 3 minutes.
  5. Spoon into bowls and top each with an egg. Serve with your favourite, crusty bread to enjoy the soupy goodness!

Recipe Tips

  • Garnish with fresh parsley or mint and a little lemon zest to brighten this dish up. 
  • Like it a little more spicy, top with crushed chili flakes for an added kick!
