Celebrate summer with this delicious grilled meal! Your tastebuds will be dancing with the wonderful Moroccan spice blend. If you haven’t cooked with Za’atar spice blend you are in for a treat, it has a wonderful, zesty citrus notes. Serve with a fresh salad of cucumbers and tomatoes to complete this meal.

  1. Combine the ground beef, ¼ cup of the broth, cumin, allspice, cinnamon and salt and pepper, mix well. Add in all the chopped herbs, and onion with juices, mix well. Refrigerate until ready.
  2. Preheat grill to 450°F. Toss potatoes with oil, garlic and za’atar. Spread out on a heavy-duty, foil tray or metal grilling tray and place to one side of the BBQ and lower the heat on that side to medium-low. After the potatoes have been on for 15 minutes pour the remaining broth over the potatoes and using a spatula, stir to scrap up any browned bits. Continue to roast until tender.
  3. While the potatoes are roasting, scoop meat, about golf ball size and squeeze and flatten around skewers, flat skewers work best for this. Place as many on the skewer as will fit. Add the beef skewers to the other side of the BBQ on medium-high heat, grill for 4-5 minutes per side until cooked through and no longer pink inside.
  4. Squeeze fresh lemon juice over the potatoes before serving, enjoy!
