Beef Pho

Directions
- Rub steak with oil on both sides; season with salt and pepper.
- Heat a medium pan over medium-high. Sear steak for 1-2 minutes per side, or to desired doneness. Rest 5 minutes then slice very thinly across the grain. Set aside.
- Cook noodles according to package directions. Drain, rinse in cold water and set aside.
- Heat broth until gently simmering. Evenly divide noodles between serving bowls; top with thinly sliced steak, vegetables and herbs. Pour simmering broth over top.
