Beef Taco Soup


This cheesy taco soup recipe combines all of the flavours from taco night! It’s loaded with ground beef, onion, red pepper, corn, cheddar cheese and our condensed cheddar cheese soup adds some extra cheesiness to the mix. The best part is that it will be ready in under 40 minutes.
How to Make Beef Taco Soup
- In large saucepan or pot, brown ground beef over medium high heat, breaking up with the back of a spoon, about 5 minutes. Drain well and return to pan with onion, red pepper, jalapeno, chili powder, salt and pepper.
- Stir in diced tomatoes and their juices, cheddar soup, and water or milk until well combined to make a sort of tomato sauce. Simmer over medium heat for 10 minutes. Stir in corn and cook for 5 minutes more.
- Serve in warmed soup bowls and topped with shredded cheese, tortilla strips, sour cream, green onions, cilantro and lime wedges.
Recipe Tips
For other topping ideas, you can add pinto beans, kidney beans, or black beans, rinsed and drained.

Amazing
