Cod and Chorizo Stew
- In a sauce pan,heat the oil over medium heat. Add the leek,sausage,bell peppers and garlic and sauté for 4 minutes or until the sausage is cooked.
- Add the Italian seasoning and continue to sauté for another minute.
- Add the cod and cook for another 2 minutes or until the cod is browned. Add the diced tomato and the broth then lower heat and simmer for 5 minutes.
- Remove from heat and add the spinach,lemon juice and cilantro.
