French-Style Pea Soup
- Melt butter in a large sauce pan over medium heat,add bacon and sauté. When bacon starts to crisp,add ham and sauté for 5 minutes or until the ham starts to caramelize.
- Add onion,carrots,celery and bay leafs,continue to sauté for 5 minutes or until caramelized. Add garlic,dried split peas and thyme,continue to cook for 2 minutes.
- Add broth and cook until the split peas are tender. Remove bay leaves and season to taste.
