Add a little spice to dinner with our Moroccan Apricot Chicken recipe. Using dried apricots, raisins and curry powder, you'll have something unique in every bite!

  1. Brown chicken well in heated oil in non-stick skillet at medium-high heat – about 5 minutes per side. Add onion,celery and curry powder. Cook and stir until vegetables are tender – about 5 minutes.
  2. Stir in broth,apricots and raisins. Reduce heat and simmer 20 minutes.
  3. Add carrots and cook for 10 minutes,stirring occasionally. Remove from heat.
  4. Stir in yogurt and serve with rice.

Recipe Tips

Apricots and raisins contain fibre – an important part of a healthy diet. With the curry powder in this dish,they create sweet and spicy flavour accents,reminiscent of Morocco. As a recipe variation,add crunchy almonds and serve over couscous instead of rice.
