Moroccan Apricot Chicken


Directions
- Brown chicken well in heated oil in non-stick skillet at medium-high heat – about 5 minutes per side. Add onion,celery and curry powder. Cook and stir until vegetables are tender – about 5 minutes.
- Stir in broth,apricots and raisins. Reduce heat and simmer 20 minutes.
- Add carrots and cook for 10 minutes,stirring occasionally. Remove from heat.
- Stir in yogurt and serve with rice.
Recipe Tips
Apricots and raisins contain fibre – an important part of a healthy diet. With the curry powder in this dish,they create sweet and spicy flavour accents,reminiscent of Morocco. As a recipe variation,add crunchy almonds and serve over couscous instead of rice.
