  • 2 tbsp (30 mL) olive oil
  • 2 large carrots, chopped
  • 2 stalks celery, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 3/4 cups (435 mL) CAMPBELL'S® Ready to Use Organic Vegetarian Vegetable Broth
  • 1/2 cup (125 mL) uncooked dried lentils
  • 1/2 cup (125 mL) uncooked regular long grain white rice
  • 2 medium Italian plum tomatoes, seeded and chopped
  • 2 tbsp (30 mL) chopped, fresh parsley leaves


  1. Heat oil in a 10" (25 cm) skillet over medium heat. Add carrots,celery,onion and garlic and cook until vegetables are tender.
  2. Stir broth,lentils and rice into vegetables and heat to a boil. Reduce heat to low. Cover and cook for 20 minutes or until rice and lentils are tender. Stir in tomatoes and parsley.
