Ingredients

  • 1 cup (250 mL) all-purpose flour
  • 3/4 cup (185 mL) cornmeal
  • 3 tbsp (45 mL) granulated  sugar
  • 4 tsp (20 mL) baking powder
  • 1 1/2 tsp (8 mL) minced fresh  rosemary
  • 3/4 tsp (4 mL) onion salt
  • 5 medium  eggs
  • 1 can CAMPBELL'S® Condensed Cream of Celery Soup
  • 1/3 cup (80 mL) 2%  milk
  • 2 cups (500 mL) frozen corn kernels
  • 1 1/2 cups (375 mL) shredded  Cheddar cheese
  • 2 tbsp (30 mL) chopped  fresh parsley (optional)

Directions

  1. Heat the oven to 350°F (180°C). 
  2. Whisk together all-purpose flour, cornmeal, granulated sugar, baking powder, minced fresh rosemary, and onion salt. In separate bowl, whisk together medium eggs, and CAMPBELL’S® Condensed Cream of Celery Soup. Pour soup mixture over flour mixture and stir until moist but still lumpy. Fold in frozen corn kernels, shredded cheddar cheese and chopped fresh parsley. Pour into greased 2 qt (1.9 L) baking dish.
  3. Bake 50 to 55 minutes or until golden and tester inserted in centre comes out clean.

Recipe tips

  • For a bacon flavour, replace the CAMPBELL’S® Condensed Cream of Celery Soup with CAMPBELL’S® Condensed Golden Bacon Soup.
  • Switch up the cheese to whatever you have on hand, such as Swiss or Monterey Jack.
