Let Campbell’s feed your cravings for Shrimp Thai Curry in less time than ordering take-out!

Ingredients

Directions

  1. Season shrimp with salt and pepper to taste. Using a large, non-stick skillet with a lid, heat 1 tbsp oil over medium-high heat. Add the shrimp and cook for 2 minutes per side, remove from pan, set aside in a bowl.
  2. Add remaining ½ tbsp oil to the hot pan, add the onions and sauté for 2 minutes until softened, then add the red peppers and broccoli and sauté for one minute.
  3. Stir in the condensed Yellow Thai Curry soup, add the shrimp with any juices back into the pan and stir well to combine. 
  4. Cover with a lid and reduce heat to low and bring to a simmer, about 4 minutes.
  5. Stir well and serve over cooked rice noodles. Squeeze with fresh lime and chopped cilantro.

Recipe Tips

  • Not into shrimp? This recipe is just as delicious swapped out for chicken or even tofu. Make sure to cook the chicken a little longer than you would shrimp, and fry your tofu until browned and crispy.
  • You don’t have to use broccoli either, try any fresh or frozen greens you have on hand!
