Soba Noodle Salad
Our Soba Noodle Salad recipe makes a tasty Asian side dish. Featuring Campbell's® Ready To Use Pho Broth, long beans, sliced carrot and authentic flavours, you'll have the perfect side in 20 minutes!
Directions
- In a medium saucepan, bring broth to a boil. Add noodles and cook for 2 minutes. Remove from heat. Add beans, cover and let sit for one minute or until noodles are al dente and the beans are tender crisp.
- In the bottom of a medium bowl, whisk together the vinaigrette: lime juice, soy sauce, sugar, ginger, sesame oil and sambal oelek.
- Add the soba noodles and green beans to the bowl with the vinaigrette along with the carrot, green onions and roasted black sesame seeds. Toss well to coat and season with salt and pepper to taste before serving.
