Soba Noodle Salad


Directions
- In a medium saucepan, bring broth to a boil. Add noodles and cook for 2 minutes. Remove from heat. Add beans, cover and let sit for one minute or until noodles are al dente and the beans are tender crisp.
- In the bottom of a medium bowl, whisk together the vinaigrette: lime juice, soy sauce, sugar, ginger, sesame oil and sambal oelek.
- Add the soba noodles and green beans to the bowl with the vinaigrette along with the carrot, green onions and roasted black sesame seeds. Toss well to coat and season with salt and pepper to taste before serving.

Not a bad recipe, I love the dressing, decent heat level and vibrant flavours. This was my first time using soba noodles although they are slightly sticky they taste good. The green beans were a little too crunchy but tolerable. I am not sure if this dish is supposed to be hot or cold because it does not specify. I tryed it hot and it was good but I will try it cold as well.
