Speedy Pulled Pork
- In a small bowl, stir together soup, apple juice, brown sugar, and vinegar. Set aside.
- In a large saucepan, heat oil over medium heat. Sauté onion and garlic for 3-5 minutes, or until browned. Stir in paprika, mustard, chili powder, pepper and bay leaf. Immediately add soup mixture and pork; stir to coat pork in sauce. Bring to simmer.
- Reduce heat, cover and simmer for 20 -25 minutes, or until pork is cooked through. Remove pork and cool slightly. Discard bay leaf.
- Using two forks, shred or pull pork apart; return to the hot liquid.
Serve piled high on warmed buns with you familys favourite coleslaw and pickles on the side.
