Tuna & Vegetable Pasta Cheddar Melt
- Cook broccoli,mushrooms and garlic in heated oil in a large non-stick skillet at medium-high heat for 3 minutes,stirring often. Remove vegetables and set aside.
- Add broth to skillet and heat to a boil. Add rotini,reduce heat and cook at gentle boil until tender – about 15 minutes – stirring often. Do not drain.
- Stir in soup,milk and pepper. Gently stir in tuna and reserved vegetables. Heat just to a boil,stirring occasionally. Sprinkle with cheese.
For an extra dash of colour and crunch,stir in 1/2 cup (125 mL) diced red pepper with other vegetables in Step 1.
