Brown Rice and Chicken Lettuce Cups

Loaded with fresh veggies, these tasty lettuce cups filled with chicken and brown rice make a satisfying lunch.

  • 2 cups (500 mL) dry instant brown rice
  • 2 cups (500 mL) PACE® Chunky Mild Salsa, divided
  • 12 each large boston lettuce leaves
  • 1 each ripe avocado, halved, pitted, peeled and thinly sliced 
  • 2 cups (500 mL) shredded rotisserie chicken
  • 1 cup (250 mL) shredded carrots
  • 1 cup (250 mL) shredded beets
  • 1 cup (250 mL) diced cucumber
  • 1 each green onions, thinly sliced


  1. Cook instant rice according to package directions.
  2. Toss rice with 3/4 cup (175 mL) salsa. Divide evenly among lettuce leaves. 
  3. Top with avocado, shredded chicken, carrots, beets, cucumber and green onions. Spoon remaining salsa over top

Recipe tips

  • Change things up by substituting brown rice for quinoa, or any of your other favourite grains
  • This recipe will taste great if you add shredded Cheddar or Monterey Jack cheese to the rice mixture.
