Easy Beef Enchiladas
Ground beef, some seasonings, chunky salsa, tortillas and cheese ... that's all it takes to make flavourful, kid-friendly enchiladas in just 35 minutes!
Directions
- Brown the ground beef in large skillet over medium-high heat, stirring often and breaking up beef with spoon, about 10 minutes. Pour off any fat. Remove from heat. Stir in chili powder, garlic powder, 1/2 cup of the salsa and 1 cup of the cheese.
- Spread 1/2 cup of the salsa in a 3-quart shallow baking dish.
- Spoon beef mixture equally down the center of tortillas. Roll up and place seamside down in the baking dish. Top with the remaining salsa and cheese.
- Bake in 350°F oven for 20 minutes or until the enchiladas are hot and the cheese melts.
Recipe Tips
Top with shredded lettuce and sour cream, if desired.
