A simple, deliciously savory soup that pairs well with crusty bread or lightly salted crackers.
- In saucepan,heat butter over medium heat; cook onions and celery until tender.
- Add broth,potatoes and pepper; bring to boil. Cover and cook over low heat for 15 minutes or until potatoes are tender.
- Place half of the potato mixture and half of the milk into blender or food processor; cover and blend until smooth. Repeat with remaining potato mixture and milk; return to saucepan. Cook over low heat until heated through.
Season soup to taste with salt,if desired. Garnish with shredded cheese,green onions or crumbled bacon.
