Garlic Shrimp Scampi


Directions
- Season shrimp with salt and pepper. Heat oil over medium heat in a large skillet. Sauté the shrimp until they pick up some colour (3-4 mins). Remove shrimp from pan and set aside.
- Add butter, garlic, pepper flakes and a pinch salt to the pan and sauté garlic for a few minutes (being careful not to burn). Increase heat to medium-high, then add 1/2 cup Campbell's broth and stir together to emulsify. Cook for 5 minutes and set aside for sauce.
- Add rice to the same pan and brown for 3-4 minutes until you hear the rice starts to crackle. Add remaining broth and mixed vegetables, then bring to a low boil. Reduce heat to medium-low, cover and cook for 3 minutes.
- Uncover pan and add grated parmesan, fresh parsley, shrimp and top with garlic pan sauce.
Recipe Tips
Ensure you toast the rice or it will not be the consistency as you see in the recipe.

Easy Prep Time
I found the prep time was faster than other recipes. What I do suggest is you can use more than just 20 shrimp.

Great flavour! Easy to make.
Overall great flavour. The pepper flakes added a unexpected pop of heat. I subbed out the rice for cauliflower rice which made it a lighter meal.
