Saucy Cashew Chicken Stir Fry
This quick and easy Saucy Cashew Chicken Stir Fry recipe is one of the best chicken recipes as it is super yummy, flavourful, and easy to make! Tender chicken is stir-fried and tossed with a spicy garlic sauce, roasted cashews, and crispy veggies.
- Season chicken with salt & pepper, let stand for 5-10 minutes. Using a non-stick wok or pan, heat vegetable oil over high heat, add chicken and stir fry for 4-5 minutes until golden brown and cooked through. Set aside chicken to a bowl and cover to keep hot.
- To make cashew chicken sauce, use the same wok or pan, heat sesame oil over medium heat and add all the vegetables and cashews, stir fry for 4 minutes.
- Add oyster sauce and carton of CAMPBELL'S® Ginger, Garlic & Soy Rich & Thick Stock. Return chicken to pan and stir fry for additional 2 minutes. Season with salt to taste.
- Serve with rice noodles.
Switch up the vegetables to keep things interesting, try this dish with broccoli or snow peas instead of peppers.
