This rice soup is not only quick and easy to make, but provides delicious flavour with moist rice, greens and tofu.

  1. Heat canola oil over medium heat. Fry garlic until golden brown. Then remove the garlic from the pan.
  2. Add tofu to the pan and fry on high heat for 1 minute. Season with sea salt.
  3. Add beef broth, water and cooked rice, and bring it to a boil. Switch to medium heat and cook for 3 minutes. Then turn off the heat, put the lid on for extra 2 minutes.
  4. Open the lid and add bok choy and sesame oil. Mix well prior to serving.

Recipe Tips

Tofu can be replaced with other ingredients to create your own version, try it with bacon, sausage, ham or mushroom.
