Slow Cooker Homestyle Beef Stew

Condensed beef broth adds loads of flavour to this classic comfort food—and using pre-cubed stewing beef, baby carrots, mini potatoes and frozen peas means virtually no chopping or prep!

Ingredients

  • 2 tbsp (30 mL) oil
  • 1 1/2 lb (681 g) stewing beef cubes
  • 1 can CAMPBELL'S® Condensed Beef Broth
  • 1 cup (250 mL) water
  • 2 cups (500 mL) mini potatoes
  • 2 cups (500 mL) baby carrots
  • 1 large onion, coarsely chopped
  • 3 garlic cloves, minced
  • 1 1/2 tsp (8 mL) Worcestershire sauce
  • 1 tsp (5 mL) dried rosemary
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 1/3 cup (80 mL) all-purpose flour
  • 1 cup (250 mL) green peas

Directions

  1. In skillet, heat oil over medium-high heat. Brown beef in batches; remove beef to slow cooker. 
  2. Add broth, half of the water, potatoes, carrots, onion, garlic, Worcestershire sauce, rosemary, salt and pepper to slow cooker. Cover and cook on low for 8 – 10 hours, or on high for 4 – 6 hours. 
  3. Whisk together remaining water and flour; stir flour mixture and peas into slow cooker. Cover and cook for 30 minutes on high or until thickened. 

Recipe tips

  • Garnish with a sprinkling of chopped fresh parsley, if desired. 
  • Serve with crusty bread for dipping into the sauce.
