Saucy Beef and Broccoli with Rice

  • 3/4 lb (340 g) lean ground beef
  • 1 cup (250 mL) chopped onion
  • 3 cups (750 mL) fresh broccoli florets
  • 1 cup (250 mL) sliced mushrooms
  • 1/2 cup (125 mL) diced red bell pepper
  • 1 can CAMPBELL’S® Condensed Low Fat Cream of Broccoli Soup
  • 1/2 cup (125 mL) water
  • 1 tbsp (15 mL) Worcestershire sauce
  • 3 cups (750 mL) hot cooked white rice, cooked without salt


  1. Brown beef and onion in large non-stick skillet at medium-high heat.
  2. Add broccoli,mushrooms and pepper. Cook and stir for 3 to 5 minutes.
  3. Add mixture of soup,water and Worcestershire sauce and heat to a boil. Reduce heat and simmer for 3 minutes. Serve with rice.

Recipe tips

  • Shiitake,crimini,oyster…if you are curious about a mushroom variety that you may not have tried before,check your local market and choose one of the many kinds for this dish. Local mushroom producers are found throughout Canada.
  • Rice easily compliments this creamy beef and broccoli mix since it cooks in about the same time as the other ingredients in the recipe. For a twist,replace the rice with whole wheat pasta,egg noodles or quinoa.

    This recipe was very good and easy to make. I ended up substituting the mushrooms since they are not very much liked in our household. We also substituted the water for beef broth and the taste was just amazing. If you are looking for something simple that the whole family can enjoy, this recipe is perfect. The vegetables can easily be substituted to fit everyone's taste! Also, instead of rice, we made egg noodles and we much preferred the egg noodles over the rice. Very good meal!

    I made this today and it was very bland, I would ad some garlic a little hot sauce and some seasoning salt, It needs a jump.

    My kids aren't big fans of red peppers or mushrooms, so I used diced carrots, cauliflower, peas and broccoli. I didn't have any worcestershire sauce so I gave a few healthy dashes of soya sauce, asian fish sauce, sprinkled some Mrs. Dash and served with flat egg noodles. Came out beautifully and was reminiscent of sheppard's pie. Everyone loved it! Thanks for the inspiration, Campbells!

    This recipe is REALLY easy and fast to make. It was good & had lots of veggies. One thing I will try next time I make it is use Soya Sauce in place of the Worcestershire.
